November is the month of the olive harvest in the Sierra de Cádiz, and it is the moment when the territory is transformed: the olive groves acquire silvery tones, the air smells of ripe fruit and the mills begin to work at full capacity to produce the extra virgin olive oil of the new harvest.
Olive growing in Cádiz
The province of Cádiz is not the first that comes to mind when talking about Andalusian olive oil - Jaén and Córdoba bear that title - but its oils have a personality of their own and a quality that is being increasingly recognized by specialized critics.
The most cultivated varieties in the Cadiz mountains are the Seville milk and the manzanilla cacereñaThe oils produced are fruity, with herbaceous touches and a characteristic spicy finish.
The oil mill experience
In November and December, some olive mills in the Sierra de Cádiz open their doors to visitors. You will be able to see the whole process: from olive to oil in a few hours. Tasting new oil -green, spicy and intense- straight from the press is a gastronomic experience you will not forget.
Where to buy oil from Sierra de Cádiz
The cooperatives of Grazalema, Zahara de la Sierra and Alcalá de los Gazules are the best places to buy directly. Many sell online, but there is nothing like carrying a carafe of new oil in your trunk.
At the breakfast of The Wind Palace you will always find extra virgin olive oil from the Sierra de Cádiz. It is one of the little luxuries that we believe any Andalusian lodging should offer.
