Ce syst\u00e8me de p\u00eache, qui permet depuis trois mill\u00e9naires de capturer le thon rouge lors de sa migration annuelle \u00e0 travers le d\u00e9troit de Gibraltar, est encore pratiqu\u00e9 aujourd'hui dans quatre localit\u00e9s de la c\u00f4te de Cadix, dont Zahara de los Atunes, \u00e0 quelques kilom\u00e8tres de Tarifa.<\/p>\n<h2>Quel est le pi\u00e8ge ?<\/h2>\n<p>L'almadraba est un syst\u00e8me de filets fixes install\u00e9s dans la mer qui suit la route migratoire du thon rouge. Lorsque le thon entre dans les filets pour passer de l'Atlantique \u00e0 la M\u00e9diterran\u00e9e, il est conduit dans la \"chambre de la mort\", o\u00f9 les p\u00eacheurs - les arraeces - ex\u00e9cutent les op\u00e9rations de p\u00eache. <em>se lever<\/em>la prise finale.<\/p>\n<h2>Une tradition de trois civilisations<\/h2>\n<p>Les Ph\u00e9niciens, les Romains et les Arabes pratiquaient la p\u00eache au thon sur ces c\u00f4tes. Les Romains de Baelo Claudia ont b\u00e2ti leur richesse sur le garum produit \u00e0 partir du thon almadraba.<\/p>\n<h2>Thon Almadraba aujourd'hui<\/h2>\n<p>Le thon rouge est consid\u00e9r\u00e9 comme l'un des produits gastronomiques les plus exclusifs au monde. Sa chair, riche en graisses om\u00e9ga-3 en raison de sa longue migration, est travaill\u00e9e \"de la t\u00eate \u00e0 la queue\", en tirant parti de toutes ses parties, comme s'il s'agissait du cochon ib\u00e9rique de la mer. Les restaurants de Tarifa et de Zahara sont les meilleurs endroits pour la d\u00e9guster fra\u00eeche, en saison (mai-juillet).<\/p>\n<h2>Le d\u00e9bat sur les pi\u00e8ges<\/h2>\n<p>Bien qu'il s'agisse d'une p\u00eache tr\u00e8s s\u00e9lective avec des quotas contr\u00f4l\u00e9s, l'almadraba suscite des d\u00e9bats sur le bien-\u00eatre des animaux.
